
One of the popular dinner menus in Korea in soy sauce braised chicken.
You are guaranteed to find it in every busy block when you eat out.
But you know businesses and their schemes!
I always expect plenty of dark meat chicken but am disappointed by the little bits of un-tender white chicken meat and loads of noodles and rice cakes that come to greet me instead.
And not only is the dish served with more carbs than protein, but the sauce is also too heavy.
SO making it at home is your best option!
Cleaner, healthier, cheaper, and loads of chicken for leftovers (:
Let’s get started!!

(this is more ingredients than actually needed because I wanted to add noodles afterwards 😅 please don’t be confused by the ingredient list and the photo – the list is the real thang)
- Recipe Ingredients:
- about 2 pounds of chicken (I used all chicken thighs and drumsticks)
- 500 ml or 2 cups of water
- 1 carrot
- 1 onion
- 1 large (or 2 small) potatoes
- 1 stalk of leek
- 2-3 jalapeños or serrano chilis (based on your spice level 🌶️)
- Sauce Ingredients:
- 75 ml or 5 Tablespoons of soy sauce
- 25 ml or 2 1/2 teaspoons of cooking wine
- 1 Tablespoon of brown sugar
- 2 Tablespoons of minced garlic
- 1/2 teaspoon of black pepper
- Recipe Steps:
- 1. blanch the chicken in boiling water 2 times for 3 minutes each time
- 2. boil the chicken in the 500 ml of water
- 3. while the chicken is cooking, chop up all the vegetables into big chunks
- 4. and mix all the sauce ingredients together
- 5. add the potatoes, carrots, and sauce into the pot of boiling chicken first and cook for 5 minutes on medium-high heat
- 6. add the onions and chilis and cook for another 5 minutes
- 7. add the leeks and cook for another 3 minutes
- 8. serve with rice!

blanch the chicken in boiling water 2 times for 3 minutes each time
(gotta make the chicken clean!!)
then boil in 500 ml water

chop up all the vegetables into big chunks

mix all the sauce ingredients together
it should come out to about 125 ml in total (though the picture quality is terrible and you can’t really tell)

add the potatoes, carrots, and sauce into the pot and cook for 5 minutes on medium-high heat

add the onions and chilis and cook for another 5 minutes

add the leeks and cook for another 3 minutes

by now, it should be all done and thoroughly cooked!
my pot was too small so I moved it to a bigger, prettier pot

serve with rice!
please no jasmine rice – let’s stick with the sticky rice (yes pun intended)
actually though if you only have jasmine rice, it’s ok i forgive you. this chicken is good with any kind of rice you got
