Chili Shrimp


  • Ingredients:
    • 1 lb large shrimp – 16/20 size
    • 1 Tablespoon cornstarch
  • Batter Ingredients:
    • 1 cup cornstarch
    • 1/2 cup water
    • 1/2 egg white
    • 1 Tablespoon oil
    • 1/2 teaspoon black pepper
    • 1/2 cup flour (optional)
    • 1/2 cup water (optional)
  • Sauce Ingredients:
    • 1/4 onion, diced
    • 1/2 yellow bell pepper, diced
    • 1/4 carrot, diced
    • 1 green chili pepper, diced
    • 1 green onion, chopped
    • 1 Tablespoon minced garlic
    • 5 Tablespoons ketchup
    • 2 Tablespoons sugar
    • 1 Tablespoon honey
    • 1/2 Tablespoon red pepper paste (gochujang)
    • 1 teaspoon soy sauce
    • 1 Tablespoon vinegar
    • 1 Tablespoon mirin
    • 1/4 cup water

  • Batter Recipe:
    • whisk the cornstarch and water – it’s hard to mix at first, but it will come together
    • let it sit in the fridge for at least 30 minutes
    • take it out gently and you will the the cornstarch sitting on the bottom and the water on top
    • pour out the water on top – you only want the wet cornstarch on the bottom
    • whisk in the egg white, oil and black pepper
  • Shrimp Recipe:
    • shell and devein all the shrimp, but keep the toil on
    • remove excess moisture from the shrimp using a paper towel
    • toss with the Tablespoon of cornstarch until they are all coated
    • mix into the batter
    • heat a pot of oil to about 350 degrees F
    • fry the shrimp for about 30 seconds each in batches – don’t overcrowd the pot
    • when all the shrimp is fried, mix it back into the leftover batter
    • if you don’t have enough batter, whisk the leftover batter with the optional flour and water
    • when the shrimp is all coated, fry them one more time
    • set them aside in a strainer to drip out some oil
  • Sauce Recipe:
    • cut all the vegetables and set them aside
    • mix together the ketchup, sugar, honey, gochujang, soy sauce, vinegar, mirin, and water
    • put some oil in a pan and heat on medium heat
    • add the green onion and stir-fry for about 30 seconds until the green onion is fragrant
    • add all the other vegetables, including the garlic
    • stir-fry everything for about 3-5 minutes until all the vegetables are softened
    • pour in the sauce and mix
    • bring it to a boil then turn off heat
    • fold in all the fried shrimp and serve!
