
I love homemade meatballs – it is so easy but tastes 10x better than store-bought ones. I feel obligated to tell you that this meatball recipe makes a BIG batch. But this sub recipe is only for 2 meatball subs. Feel free to cut down the meatball recipe, but if you’re like me and you absolutely love meatballs, just make it all! Freeze whatever you don’t use in a ziplock bag and heat it up whenever you make pasta or mashed potatoes!
- Meatball Ingredients:
- 1 lb ground beef
- 1 lb ground pork
- 1/2 cup breadcrumbs
- 1/3 cup milk
- 1/4 cup onion, finely diced
- 1/4 cup parsley, finely chopped
- 1/4 cup grated parmesan
- 1 egg
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- Marinara Ingredients:
- 1 Tablespoon olive oil
- 1/4 onion, diced
- 1 Tablespoon minced garlic
- 1 tomato, diced
- salt and pepper
- 1 teaspoon dried basil
- 1 teaspoon red pepper flakes
- 1/2 teaspoon brown sugar
- 1 cup jarred tomato sauce
- 2 Tablespoons grated parmesan
- Sub Ingredients:
- 2 submarine breads
- 1/4 cup giardiniera, chopped (optional)
- 1/2 cup shredded mozzarella
- 1 Tablespoon parsley for garnish
- Meatball Recipe:
- knead all the ingredients together with your hands until everything is well mixed
- for the breadcrumbs, you can grind your own stale bread instead OR use panko
- shape them into balls – about 2 Tablespoons of the mix in each ball
- place them on a baking pan lined with parchment paper
- bake in the oven preheated at 400 degrees F for about 25 minutes
- Marinara Recipe:
- heat the olive oil in a pan on medium-high heat
- add the onion, garlic, and tomato
- stir and cook until the tomatoes are softened
- add the salt and pepper, basil, red pepper flakes, and sugar
- mix it all up and when the spices become fragrant (about a minute of cooking), add the tomato sauce and parmesan
- cover the pan and let it simmer for about 10 minutes
- add 6-8 meatballs into the tomato sauce and mix it all up
- turn off heat
- Sub Recipe:
- toast the sabmarine bread – I like to put it in the air fryer at 375 degrees F for 2 minutes
- cut 2 strips down the middle of the sub, and dig the bread out in between the 2 strips – basically you’re creating a narrow crevice down the middle so you can stuff in your meatballs
- chop the giardiniera and place it in the bottom of the crevice
- put 3-4 meatballs in each bread and spoon some marinara sauce on top
- sprinkle mozzarella and heat it until the cheese melts – I like to air fry it again at 375 degrees F for 1 minute, but you can also put it in the oven until the cheese melts
- sprinkle with parsley and serve!
