
- Salsa Ingredients:
- 1 red bell pepper
- 1 tomato
- 1/4 an onion
- 1 jalapeño
- 1/4 cup cilantro, packed
- 1 lemon, juiced
- 1 teaspoon minced garlic
- salt and pepper
- Egg Scramble Ingredients:
- 2 eggs
- 1 Tablespoon milk
- salt and pepper
- 1/2 Tablespoon butter
- Sandwich Ingredients:
- 1/2 baguette
- 1 Tablespoon butter
- 3 slices bacon
- 2 slices sharp cheddar cheese
- Salsa Recipe:
- turn the stove on to medium heat and place the bell pepper whole on top of it
- roast the bell pepper while flipping it around constantly to char the skin completely
- place the charred bell pepper in a bowl and cover with plastic wrap
- while it is resting, dice the tomato and onion
- deseed the jalapeño and dice very finely
- chop up the cilantro leaves
- place all the chopped vegetables in a bowl with the minced garlic and juice of one lemon
- take the bell pepper out of the bowl – when you rub on the outside, the skin will come off
- remove the entire skin, and dice the bell pepper
- mix it with the bowl of tomato salsa and season the salsa with salt and pepper
- Egg Scramble Recipe:
- whisk the eggs with milk
- season with salt and pepper
- melt the butter in a pan on medium-low heat
- pour in the eggs and scramble! – you can make the doneness to your liking
- Sandwich Recipe:
- cook the bacon in a pan to your liking – I personally like mine not too crispy
- slice the baguette and toast both sides in melted butter
- on the top side of the bread, place the egg scramble and cheddar cheese
- cover the bread with a bowl or lid (or heat in the the air fryer or microwave) to melt the cheese
- on the bottom side of the baguette, place the salsa and bacon slices
- put the two sides of the bread together and serve!
