
- Chicken Ingredients:
- 2 pounds boneless chicken thighs
- 1 Tablespoon minced garlic
- 1/3 cup soy sauce
- 2 Tablespoon lime juice
- 2 teaspoons cumin
- 1 teaspoon paprika
- 1/2 teaspoon oregano
- 1/2 teaspoon black pepper
- 1/4 teaspoon ground coriander
- Green Sauce Ingredients:
- 3 jalapeños
- 1 cup cilantro
- 2 green onions
- 3 cloves garlic or 1/2 Tablespoon minced garlic
- 3/4 cup Greek yogurt
- 1 teaspoon honey
- juice of 1 lime
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- Black Beans Ingredients:
- 2 slices bacon
- 1/4 onion, very finely diced
- 1/2 Tablespoon minced garlic
- 2 green onions, finely diced
- 1/4 bell pepper, finely diced
- 2 Tablespoons cilantro, chopped
- 1 can black beans
- 1/2 cup chicken broth
- 1 bay leaf
- pinch of cumin
- pinch of oregano
- 1 Tablespoon lime juice
- salt and pepper to taste
- Chicken Recipe:
- mix up everything from the garlic to the coriander
- mix in the chicken and leave it in the fridge to marinate for at least 30 minutes
- place the chicken on a baking pan lined with parchment
- bake in the oven preheated at 425 degrees F for 25 minutes until the internal temperature of the chicken reads at least 165 degrees F
- Green Sauce Recipe:
- put all the ingredients in a food processor and blend until smooth
- Black Beans Recipe:
- cut the bacon into thin strips and cut all the vegetables into very fine pieces
- put the bacon in a pot on medium-high heat and sauté until it’s about halfway cooked and the oil renders out
- add the onion, garlic, green onion, bell pepper, and cilantro
- stir and cook until the vegetables are slightly softened – about 2 minutes
- drain and rinse the can of black beans
- add the black beans to the pot with the rest of the ingredients from the chicken broth to the lime juice
- cover the pot and leave it to cook for about 15 minutes
- season to taste
- serve with the chicken and green sauce!
