Jaeyuk Bokkeum (aka Spicy Pork Stir-Fry)


  • Sauce Ingredients:
    • 1 Tablespoon sugar
    • 2 Tablespoons soy sauce
    • 2 Tablespoons red pepper powder (gochugaru)
    • 2 Tablespoons red pepper paste (gochujang)
    • 1 Tablespoon plum syrup (or honey)
    • 1 Tablespoon minced garlic
    • 1 teaspoon sesame oil
    • 1/2 teaspoon black pepper
  • Ingredients:
    • 1 Tablespoon sesame oil
    • 600 grams pork (I mixed pork belly and jowl)
    • white part of 1 leek, sliced
    • 1 Tablespoon mirin
    • 1/2 onion, sliced
    • 1/4 carrot, quartered and sliced
    • 1 cup kimchi (optional)

  • Recipe:
    • mix all the sauce ingredients together
    • cut the pork into bite size pieces
    • heat up sesame oil in a large pan on high heat
    • add the pork, leek, and mirin
    • sauté until the outside is starting to cook
    • add the onion, carrot, and kimchi
    • stir fry and cook until the pork is throughly cooked and the kimchi is soft
    • mix in the sauce
    • keep cooking until everything is well coated and the sauce is cooked through – about 3-5 minutes
