Eggplant Stir-Fry


  • Sauce Ingredients:
    • 1/4 cup water
    • 1 Tablespoon soy sauce
    • 2 Tablespoons oyster sauce
    • 3 Tablespoons mirin
  • Ingredients:
    • 2 Tablespoons oil
    • 2 Tablespoons minced garlic
    • 2 green onions, chopped into 2-3 inch pieces
    • 2 Tablespoons red pepper powder (gochugaru)
    • 2 Japanese or Chinese eggplants, sliced into 1/2 inch pieces
    • 1/2 onion, sliced
    • 1 green serrano pepper (or 1/2 a pepper to make it less spicy)
    • 1 red serrano pepper
    • 1 fried egg
    • sesame oil and sesame seeds

  • Recipe:
    • mix all the sauce ingredients together
    • slice up all the vegetables
    • in a pan, heat up the oil on medium-high heat
    • add the garlic and green onion
    • stir-fry for a minute until fragrant
    • mix in the red pepper powder
    • right away, add the eggplants, onion, and peppers and mix it in before the powder burns
    • toss and fry for a minute and pour in the sauce
    • keep stirring and cooking until there is no more liquid
    • serve with rice
    • top it with a fried egg, sesame oil, and sesame seeds! (optional)
