
- Sauce Ingredients:
- 1/4 cup water
- 1 Tablespoon soy sauce
- 2 Tablespoons oyster sauce
- 3 Tablespoons mirin
- Ingredients:
- 2 Tablespoons oil
- 2 Tablespoons minced garlic
- 2 green onions, chopped into 2-3 inch pieces
- 2 Tablespoons red pepper powder (gochugaru)
- 2 Japanese or Chinese eggplants, sliced into 1/2 inch pieces
- 1/2 onion, sliced
- 1 green serrano pepper (or 1/2 a pepper to make it less spicy)
- 1 red serrano pepper
- 1 fried egg
- sesame oil and sesame seeds
- Recipe:
- mix all the sauce ingredients together
- slice up all the vegetables
- in a pan, heat up the oil on medium-high heat
- add the garlic and green onion
- stir-fry for a minute until fragrant
- mix in the red pepper powder
- right away, add the eggplants, onion, and peppers and mix it in before the powder burns
- toss and fry for a minute and pour in the sauce
- keep stirring and cooking until there is no more liquid
- serve with rice
- top it with a fried egg, sesame oil, and sesame seeds! (optional)
