
The end of summer is coming and the peaches are starting to fall in quality. I bought some peaches that weren’t the sweetest nor juiciest. But with fruits, that’s a blessing in disguise. Any time fruits are just okay means that you get to enjoy it in a dessert! Therefore, these peaches became a celebration of the end of summer.
This cobbler recipe is so cozy and warm. With both cinnamon and nutmeg, the aromas just take you into a space far from reality. Instead of adding butter into the batter, we bake the batter in melted butter. That makes the outside super crunchy and a nice contrast to the softness of everything else. And don’t forget to serve this with vanilla ice cream! It will just take it to another level, and I urge you – not just recommend you – to have each bite of cobbler with some ice cream!
- Peach Ingredients:
- 3 peaches, peeled, cored, and sliced
- 2 Tablespoons sugar
- a pinch of salt
- 1/4 teaspoon cinnamon
- 1/8 teaspoon nutmeg
- Batter Ingredients:
- 3 Tablespoons butter
- 1/2 cup all-purpose flour
- 2 Tablespoons brown sugar
- 1/4 cup sugar
- 1 teaspoon baking powder
- 1/8 teaspoon cinnamon
- a pinch of salt
- 1/4 cup + 2 Tablespoons milk
- 1/2 teaspoon vanilla extract
- Recipe:
- mix the sliced peaches with the sugar and spices
- put butter in a 7.5 inch by 6 inch casserole dish or a small cake pan
- place it in the oven preheated at 350 degrees F for about 5 minutes until the butter is fully melted
- whisk the rest of the batter ingredients together just until no flour shows – you don’t want to overmix!
- pour the batter into the dish with the melted butter
- spread the peaches all over the top – you don’t have to press it into the batter
- put it back in the oven for 30 minutes until the top is throughly golden brown and a knife comes out clean when you stick in the center
- scoop out onto plates and serve it warm with ice cream!
