Strawberry Cobbler

My fiance’s favorite fruit is strawberry. But I only eat strawberry if it’s paired with something sweet like chocolate or ice cream. I just don’t like how tart it is. I’ve had some really good quality, expensive, super juicy and sweet strawberries too, but I think my first reaction is to flinch because I am so accustomed to tart strawberries.

I bought a bunch of strawberries recently for my fiance. But with all the food around the house, we ended up neglecting those strawberries and they started to go bad. So I decided to use them all up in a strawberry cobbler. Oh. My. Lord. It was so good we nearly finished entire cobble in one sitting. I think it became one of my top 5 desserts, and my fiance now loves strawberries even more than he already did. It’s been days since I made it and he still brings it up.

So if you also have some strawberries on hand and you think they are a little too sour, use them up with this recipe!


  • Strawberry Ingredients:
    • 3 cups strawberries
    • 2 Tablespoons brown sugar
    • 1 Tablespoon cornstarch
    • 1 Tablespoon lemon juice
    • 1/2 teaspoon vanilla extract
    • 1/2 teaspoon cinnamon
    • 1/8 teaspoon nutmeg
  • Dough Ingredients:
    • 125 grams all-purpose flour
    • 30 grams sugar
    • 3/4 teaspoon baking powder
    • 1/8 teaspoon baking soda
    • a pinch of salt
    • 1/4 teaspoon cinnamon
    • 56 grams cold butter
    • 1/4 cup buttermilk
    • 1/4 teaspoon vanilla extract
    • 1 egg for egg wash

  • Recipe:
    • chop the strawberries into large pieces – they break down a lot and disintegrate so keep them on the larger side
    • mix the strawberries with all the strawberry ingredients
    • put them in a 7.5 inch by 6 inch casserole dish or a small cake pan
    • place it in the oven preheated at 350 degrees F for about 10 minutes then set aside
    • mix flour, sugar, salt, baking powder, baking soda, salt, and cinnamon in a large bowl
    • work the cold butter into the flour, pressing it into long and thin shards
    • stir together the buttermilk and vanilla
    • add the liquid into the flour and stir with a fork
    • lightly knead the dough and flatten it with your hands
    • fold it over on itself, flatten it, and fold it over again – you want to create layers of dough
    • flatten the dough to about 1/2 inch thick
    • rip and place pieces of the dough all over the top of the strawberries
    • whisk the egg until it is homogenous and use a pastry brush to lightly brush the top of the dough with egg
    • increase the oven temperature to 375 degrees and bake for about 30 minutes until the top is throughly golden brown and you see strawberries bubble up the sides
    • scoop out onto plates and serve it warm with ice cream!
