
Today I am introducing the most classic dessert of all : the brownie. Brownies are super addicting, but I never liked the flat tone they had. It is the same heavy flavor all throughout. So I took some tart cherries and liquor to make this beautiful, textured brownie. It is heavenly 😇
So as an angel myself, I am sharing my brownie recipe to all the earthens out there (:
As a side note, Americans are always debating between whether a cakey brownie is better or a fudgey brownie is better. Koreans loveeee fudgey ones and even have a term of their own to describe a fudgey brownie – 꾸덕꾸덕 or gguduk gguduk. This is one gguduk gguduk brownie!
- Jam Ingredients:
- 200 grams frozen cherries (pits removed)
- 50 grams sugar
- 1 Tablespoon lemon juice
- 1 Tablespoon cognac or kirsch
- Brownie Ingredients:
- 171 grams butter
- 230 grams sugar
- 2 eggs
- 1/2 teaspoon vanilla
- 113 grams dark chocolate, melted
- 95 grams all purpose flour
- 30 grams cocoa powder
- 1 teaspoon salt
- 113 grams chocolate chunks
- Recipe:
- simmer the cherry, sugar, and lemon juice until thickened while keep stirring
- mix in cognac and let it cool
- melt and cool the butter
- whisk the butter and sugar, almost creaming it
- whisk in the eggs and vanilla
- mix in the melted chocolate
- whisk together the flour, cocoa powder, and salt
- mix into the butter mixture just until incorporated
- fold in the chocolate chunks
- line 2 8×8 inch square pans with parchment and butter them
- split the batter between the two pans
- top the batter with cherry jam and swirl it in
- bake in a preheated oven at 180°C for about 25 minutes
