Scone Series Part 1 : Caramelized Onion Scones
I have made some bomb-ass scones during my time on this earth. I could die right now and these scones could be my legacy, being passed down generation to generation and becoming the foundation of the Jammin Empire and leaving my name in history books.
But I don’t want my descendants to grow up as old-money assholes who destroy society. That is the only reason why I’m sharing my recipes with you 😉
This right here is my caramelized onion scones. Korean scones in bakeries/cafes are usually very limited to sweet options. So I wanted to offer a slightly more savory type to my Korean audience, while sticking to their sweet tooth. This scone got rave reviews, and it is easy to see why!
- Ingredients:
- 250 grams all purpose flour
- 35 grams sugar
- 2 grams kosher salt
- 10 grams baking powder
- 100 grams cold butter
- 100 grams cold milk
- 25 grams grated parmesan cheese
- 90 grams caramelized onions
- 1 teaspoon garlic powder
- 1/2 teaspoon ground black pepper
- 1 Tablespoon heavy cream or milk
- Recipe:
- mix flour, sugar, salt, and baking powder in a large bowl
- work the cold butter into the flour, pressing it into long and thin shards
- mix in the rest of the dry ingredients
- mix in the parmesan cheese, caramelized onions, garlic powder, and black pepper
- add milk little by little and mix with a fork until it comes together into a shaggy dough
- roll out the dough and fold it in half to create 2 layers of dough
- repeat this process about 5 times
- chill the dough, then cut it into six equal parts
- brush the top with cream and sprinkle a little more parmesan cheese
- bake in a preheated oven at 190°C for 20 minutes
